For your belly. And a recent occurrence.

So, I have this love affair with noodles.  Any kind of noodle (provided it's not stuffed with cheese).  I stumbled upon this recipe and thought it looked awesome.  And cheap.  Which is a perfect combination for us newlyweds.  Or maybe anyone.  So, I made it my own, and it was one of the best things I have ever eaten.  Ever.  So, being the kind hearted person I am, here it is.  My gift to you.

Thai Peanut Noodles
You will need:
  • 1/2 c. chicken broth
  • 3 Tbsp. chunky peanut butter (you can use whatever you have on hand)
  • 1 1/2 tsp Siriacha chili sauce (this is pretty mild.  If you want more of a bite use a bit more)
  • 1 1/2 Tsp. honey
  • 3 Tbsp. soy sauce
  • 3 cloves garlic--minced
  • 2 Tbsp fresh minced ginger
  • 8 oz Linguine noodles (or Udon.  Or even Ramen noodles, if that's what you've got on hand.)
  • Chopped Cilantro
  • 1 cup chicken--cooked and sliced (optional)
Cook noodles in a pot of salted water.  In the meantime, combine chicken broth, peanut butter, chili sauce, honey, soy sauce, ginger, and garlic in a small sauce pan over medium-low heat.  Whisk until smooth and remove from heat.  If using chicken, add it to the sauce.  Toss cooked noodles with the sauce and divide among 4 bowls.  Sprinkle with cilantro.

I promise this is good.  Like way good.  You are going to want to eat it everyday.

On another note:  remember how I was feeling a little down yesterday?  Well, the icing on the cake happened at around 8:00pm when Mista T. and I realized that his wallet had been stolen from his car.  Roughly $700 dollars in fraudulent purchases had been made.  Yikes!  Good thing I married a man who didn't let me freak out too much.  Well, he let me freak out for a few minutes.  But then he told me to stop.  

It looks like everything is going to work out fine.  Our banks cooperated with us really well, and hopefully we'll be refunded out money soon.

Sorry to hear about the wallet. Same thing happened to us last year. They unlocked the car and stole the wallet right in front of our house. It freaked me out. Luckily, we got the money back from the bank. It only took a few days.
Hopefully you get your refund soon.

Yikes! Good luck with the monies!

So I totally made that chicken tortilla soup the other day and it was fabulous. My husband's favorite food is thai, and now i'm sure I will be making this for him soon! haha, thanks for sharing!!! Do you come up with these recipes on your own? They're bomb!

I think I have this recipe pinned on Pinterest. My food board is my biggest, lol, so I haven't gotten around to it yet. Definitely going to have to make it a priority.

@Mel--Thanks for the support, girl! I think it'll all work out. A police man came over today, and showed us pictures of the perpetrators. Hopefully the little snakes will be caught soon!

@Alexis--I don't make them up . . . I just hate to go grocery shopping, so I modify them to fit what is already in my cupboard. Ha ha. This one is from Our Best Bites.

A. YUMMMMM and B. I'm glad the bank is refunding you guys! The bank can be so silly and difficult when stuff like that happens so that's lucky they are seemingly being not-lame about it. yay! :)
